The Grain
Where Flavour Begins

Every whisky starts with a cereal grain. That grain is not just a fermentation substrate – it is the first flavour decision a distillery makes, and its influence runs through every stage of production that follows. Most whisky drinkers never think about grain. The ones who do taste differently.

Scotch single malt is made exclusively from malted barley. But the variety of barley matters – different strains produce different yields of fermentable sugars, different levels of enzyme activity, and subtly different flavour compounds. For most of the twentieth century, distilleries used whatever barley was cheapest. That has changed. A handful of distilleries now specify heritage barley varieties – Bere barley, Golden Promise, Plumage Archer – precisely because they produce a distinctively different spirit.

Malted barley

Before barley can be fermented, it must be malted – partially germinated to activate the enzymes that will convert starch into fermentable sugar. The barley is soaked in water, allowed to germinate for several days, then dried in a kiln to stop germination. It is this kilning stage where peat smoke, if used, is introduced. Without malting, the starch in barley is inaccessible to yeast.

American bourbon uses a grain bill – a mixture of grains – that must be at least 51% corn by law. The remainder is typically rye (which adds spice) or wheat (which adds softness), plus malted barley (which provides the enzymes for conversion). The proportion of each grain in the bill has a direct and significant effect on flavour. High-rye bourbons are spicier and drier. Wheated bourbons (like Maker’s Mark or Pappy Van Winkle) are softer and sweeter.

Irish whiskey can use a combination of malted and unmalted barley – a style called pure pot still – which produces a distinctive creaminess and spiciness found nowhere else. Japanese whisky predominantly uses malted barley, often imported from Scotland, though some distilleries experiment with local grains.

Mashing & Fermentation
Where the Alcohol Is Born

Once the grain is prepared, it is milled and mixed with hot water in a vessel called a mash tun. This process – mashing – dissolves the fermentable sugars released by malting and produces a sweet liquid called wort. The temperature of the water matters: too hot and you destroy the enzymes; too cold and the sugars don’t dissolve. Most distilleries use three or four separate water additions at increasing temperatures to extract as much sugar as possible.

The wort is then transferred to fermentation vessels – traditionally wooden washbacks made from Oregon pine or larch, though many modern distilleries use stainless steel. Yeast is added. Fermentation begins. And this is where flavour gets complicated.

Yeast converts sugar to alcohol – but it also produces hundreds of flavour compounds as byproducts. The strain of yeast used matters. Distiller’s yeast produces a reliable, clean fermentation. Brewer’s yeast produces more esters – more fruit. Some distilleries use proprietary yeast strains that have been developed over decades.

Fermentation time is equally critical. A short fermentation (48 hours) produces a spirit that is clean and cereal-forward. A long fermentation (72-100+ hours) allows bacteria to develop alongside the yeast, producing additional organic acids that react with alcohols to create complex, tropical fruit esters. This is why Springbank’s long fermentations produce that distinctive funky, tropical character. This is why Macallan’s shorter fermentations produce a cleaner, more spirit-forward new make.

Washback material – does it matter?

The debate continues. Wooden washbacks harbour residual bacteria from previous fermentations, which contribute to a more complex, slightly funky fermentation character. Stainless steel is neutral and easier to clean – producing a cleaner ferment. Distilleries that switched from wood to steel often report a perceptible change in spirit character. Those that kept wood often cite it as essential to their house style.

Distillation
The Art of the Cut

Distillation separates alcohol from the wash (the fermented liquid) by exploiting the fact that alcohol boils at a lower temperature than water. Heat the wash, collect the vapour, cool it back into liquid – and you have a more concentrated spirit. Scottish single malt is distilled twice: first in a wash still, then in a spirit still. The wash still produces a liquid called low wines at around 20-25% ABV. The spirit still refines this to the final new make spirit at 60-70% ABV.

But distillation is not simply concentration. It is also selection. The shape of the still – its height, the angle of the lyne arm, the presence or absence of a purifier – determines which compounds rise with the vapour and which fall back. Taller stills with upward-angled lyne arms produce lighter, more delicate spirit. Shorter, squatter stills produce heavier, richer spirit. This is one of the most powerful tools a distillery has in shaping its house style.

The Cut Points

During the spirit still run, the distiller must make two critical decisions – when to move from foreshots to the heart (the first cut) and when to move from the heart to feints (the second cut). The foreshots contain methanol and heavy sulphur compounds – they are recycled, not kept. The heart is the desirable spirit. The feints contain heavier, oilier compounds. Running deeper into the feints produces a heavier, more complex spirit. A narrow cut produces something lighter and more delicate. Every distillery’s cut points are a carefully guarded aspect of their house style.

Copper plays a chemical role that is often underestimated. As spirit vapour contacts the copper of the still, a reaction occurs that strips out sulphur compounds – which are generally undesirable in lighter styles but can add complexity in heavier ones. More copper contact means a cleaner spirit. Less contact means a heavier one. This is why some distilleries use copper worm tub condensers (more traditional, less copper contact) while others use shell-and-tube condensers (more modern, more copper contact).

Maturation
The Long Conversation with Oak

New make spirit – the clear liquid that comes off the still – is raw, aggressive, and often harsh. Time in oak transforms it. The cask does four things: it adds flavour (from the wood itself and whatever the cask previously contained), it removes unwanted compounds (certain sulphurs and heavy congeners are absorbed by the wood), it allows oxidation (oxygen enters through the wood grain and smooths the spirit), and it allows evaporation (the “angel’s share” – typically 2% per year in Scotland, more in warmer climates – concentrates what remains).

The legal minimum for Scotch whisky is three years in oak casks in Scotland. The climate matters enormously. Scotland’s cool, damp conditions mean the spirit matures slowly and the angel’s share is relatively modest. A Scotch that has spent 12 years in a Scottish warehouse has experienced very different conditions to a whisky matured for the same period in Kentucky, Tennessee, or Taiwan, where summer temperatures inside a warehouse can exceed 40°C.

“Age is not quality. A 30-year-old Scotch in an exhausted cask can taste hollow and wooden. A 10-year-old in a first-fill sherry butt can be extraordinary. The cask is everything.”

The activity level of the cask – how much flavour it still has to give – depends on how many times it has been filled before. A first-fill cask (filled for the first time with Scotch after previously holding bourbon or sherry) is highly active and imparts significant flavour quickly. A second-fill cask is less active. A third-fill or refill cask imparts very little from the wood, allowing the distillery character to dominate. Many distilleries use a combination of fill types to achieve balance.

From Cask to Bottle
The Final Decisions

Most whisky undergoes several processes between cask and bottle that the label rarely mentions but the taster can often detect. Understanding these processes changes how you read a label – and what you taste when you open a bottle.

Vatting (or marrying) is the blending of multiple casks to achieve a consistent house style. A 12-year-old expression from a major distillery might contain spirit from dozens or hundreds of casks, each selected and combined to hit the flavour target. This is a skilled art – the job of the master blender or distillery manager. Independent bottlers, by contrast, often bottle single casks, which means each bottle is unique and the flavour can vary significantly from one release to the next.

Chill filtration

Before bottling, most commercial whiskies are chill filtered – cooled to around 0°C and passed through a filter to remove fatty acids and proteins that would cause the whisky to go hazy when water or ice is added. This haze is harmless and actually indicates the presence of flavour-carrying compounds. Many argue that chill filtration removes some body and flavour. Non-chill filtered whisky (often labelled NCF) tends to have a richer, oilier texture and is considered by many enthusiasts to be superior.

ABV at bottling is a final flavour decision. Most commercial whisky is diluted with water to a standard bottling strength – typically 40% or 43% ABV. Cask strength whisky is bottled without dilution, at whatever strength it has reached in the cask – typically 55-65% ABV. At cask strength, the whisky is more intense and you control the dilution yourself. Natural colour means no caramel colouring (E150a) has been added – a common practice in commercial whisky to ensure batch consistency. The presence of added colour has a minor effect on flavour but is considered by purists to be a compromise.

These are not minor details. Non-chill filtered, natural colour, cask strength – this combination represents whisky at its most uncompromised. Understanding what each term means allows you to choose deliberately rather than by label aesthetics alone.
