The Flavour Wheel
Where It Came From and Why It Matters

In 1978, a group of sensory scientists at the Scotch Whisky Research Institute faced a problem. Distillers, blenders, and buyers across the industry were all describing the same whiskies using completely different language. One person’s “barnyard” was another’s “earthy.” One nose called it “medicinal.” Another said “coastal.” There was no shared vocabulary – and without shared vocabulary, there is no meaningful communication.

So they built one. The result was the first whisky flavour wheel – a circular map of aroma descriptors organised from broad categories at the centre to specific notes on the outer ring. It wasn’t designed for enthusiasts. It was designed for the industry: a technical tool so that distillers, blenders, quality controllers, and buyers could talk to each other with precision.

In the early 1990s, whisky writer Charles MacLean simplified the original SWRI wheel into a more accessible version published in Whisky Magazine. That version became the template for almost every flavour wheel you will encounter today – including the one built into this module.

The wheel has eight primary categories. Six of them describe aromas that arise during production – during malting, fermentation, and distillation. Two of them describe aromas that develop during maturation in oak casks. Understanding which flavours come from where is the first step toward understanding whisky at a deeper level. That is exactly what the next two lessons will teach you.

Why eight categories?

The eight sections map directly onto the chemistry of whisky production. Cereal, fruity, floral, peaty, feinty, and sulphury flavours all originate in the distillery. Woody and winey flavours develop in the cask. The wheel is not arbitrary – it is a map of the making.

Cereal

From: Malting & Fermentation

The foundation of every whisky. Cereal notes come from the grain itself – barley, corn, rye, wheat – and from the early stages of fermentation. These are the flavours closest to the raw material. Before any cask influence, before any peat, this is the whisky’s bedrock.

Look for it in: Lowland Scotch, unpeated grain whiskies, young single malts. Auchentoshan and Glenkinchie are classic examples.

Fruity

From: Fermentation & Distillation

Fruit notes in whisky are esters – chemical compounds created during fermentation when acids react with alcohols. A longer fermentation produces more esters, which means more fruit. This is why distilleries with long fermentation times (72+ hours) tend to produce fruitier spirits. The cut points during distillation also matter: taking more of the foreshots produces lighter, fresher fruit; running deeper into the spirit produces heavier, darker fruit.

Look for it in: Speyside single malts. Glenfarclas, Glenfiddich, and Aberlour are consistently fruity. Dried fruit signals sherry cask influence.

Floral

From: Fermentation & Distillation

Floral notes are aldehydic compounds – light, delicate, and easily overwhelmed by heavier flavours. They are a sign of a very clean, precise distillation, typically from tall copper pot stills that allow a long conversation with the spirit vapour. The taller the still, the lighter and more floral the character. Japanese whisky is famous for this quality – partly because Japanese distilleries often use tall stills and prize delicacy above everything.

Look for it in: Japanese whisky (Hakushu, Nikka Coffey Grain), Highland Park, and some lighter Speysides. Glenmorangie’s tall stills produce notably floral spirit.

Peaty

From: Kilning (malting stage)

Peat smoke is the most divisive flavour in whisky – and the most misunderstood. It is not a natural characteristic of Scotch; it is a choice made at the malting stage, when barley is dried over burning peat. The phenolic compounds in peat smoke bond with the barley and survive fermentation, distillation, and maturation. The level of peat is measured in PPM (parts per million of phenols). Laphroaig runs at around 40-45 PPM. Octomore has exceeded 300 PPM. But PPM is not the whole story – the type of peat matters too. Islay peat is coastal and iodine-rich. Highland peat is earthier and more heathery.

Look for it in: Islay whiskies (Laphroaig, Ardbeg, Lagavulin). Highland Park for a softer, heathery peat. Benriach for peated Speyside expressions.

Feinty

From: Distillation (late spirit run)

Feints are the heavier compounds that come toward the end of the spirit run during distillation. The stillman’s job is to decide when to make the cut – when the flowing spirit transitions from the desirable “heart” to the heavier, funkier feints. Running deeper into the spirit run (collecting more feints) produces a heavier, more complex whisky. Some distilleries do this deliberately. Good cask maturation transforms feints into complex, sought-after notes. Poor maturation and they remain coarse.

Look for it in: Heavily matured expressions, older single malts, some heavily sherried whiskies. Mortlach is famous for its meaty, feinty character from its unusual distillation method.

Sulphury

From: Distillation (copper interaction)

Sulphur is the category most people want to avoid – but it is important to understand. Sulphur compounds naturally occur during fermentation. Copper in the pot stills removes most of them through a chemical reaction. Distilleries with longer spirit-to-copper contact (taller stills, more passes through copper) produce cleaner, lighter spirit. Shorter contact produces more sulphury character. In small doses, sulphury notes add complexity. In large doses, they are considered a fault. Worm tub condensers (old-fashioned wooden condensers) produce more sulphury spirit than modern shell-and-tube condensers – which is why some distilleries that switched to modern condensers found their spirit changed dramatically.

Look for it in: Clynelish (a waxy, sulphury note considered a signature), Springbank (uses worm tubs). Light sulphur in a well-aged whisky often signals interesting complexity ahead.

Woody

From: Cask maturation

Wood is the single biggest external influence on whisky flavour – responsible for up to 70% of the final character in a mature Scotch. American white oak (used in bourbon barrels) releases vanilla, coconut, and sweet spice. European oak (used in sherry butts) is denser and releases darker, spicier, more tannic notes. The char or toast level of the cask, the number of times it has been filled before, and the years of maturation all affect how much and what kind of wood influence enters the spirit. Over-woody whisky – where the oak has dominated everything – is a sign of too long in cask, too active a wood, or a light spirit that couldn’t stand up to the barrel.

Look for it in: Bourbon-cask aged Scotch (Glenfiddich 12, Glenmorangie Original). American bourbon for the full expression. Any whisky aged in first-fill casks will show heavy wood influence.

Winey

From: Previous cask contents

Winey notes come from casks that previously held wine or fortified wine – most commonly sherry (Oloroso, Pedro Ximénez), but also port, Madeira, Sauternes, and red wine. The wood absorbs the liquid it holds, and some of that liquid is extracted by the whisky spirit during maturation. Oloroso sherry casks produce rich, dark, dried-fruit and nut notes. PX casks produce intensely sweet, raisin and molasses character. The distinction between “woody” and “winey” is important: woody notes come from the oak itself; winey notes come from what was in the oak before.

Look for it in: Glendronach, Aberlour A’bunadh, Macallan Sherry Oak, GlenDronach 18. Any whisky labelled “sherry cask” or “sherry finish” will show winey characteristics.

Two things worth remembering as you use the wheel: first, most whiskies span multiple categories simultaneously – a good Speyside might show fruity, floral, and woody notes all at once. Second, the wheel is a starting point, not a ceiling. If you smell something that isn’t on the wheel, trust your nose and describe it anyway.

Building Your
Tasting Vocabulary

The flavour wheel gives you eight categories. But vocabulary is more than categories – it is the ability to connect what your nose detects to words that mean something to someone else. This is a skill that develops with practice, not one you acquire by memorising a list.

The most common mistake beginners make is trying to find every note on the wheel in every glass. Professional tasters don’t work like that. They anchor to the dominant character first – the thing that hits you immediately – then look for what sits underneath it. One dominant note plus two supporting notes is a better tasting note than ten vague ones.

“Your palate is built from your memory. The more reference points you collect in life – every smell, every food, every place – the richer your tasting vocabulary becomes.”

The key is building a personal reference library. When you smell something in a whisky, connect it to a real memory. Not “fruity” – “like the green apples in my grandmother’s kitchen.” Not “smoky” – “like bonfire night.” The more specific and personal the reference, the more reliably you will recognise it again.

Anchor

The dominant note. What hits you first and loudest. Every tasting note should start here before going deeper.

Supporting notes

The secondary aromas that appear once the alcohol settles. Usually 2-3. These add complexity to the anchor.

Development

How the nose changes over time as the spirit opens up. A whisky that changes significantly with air is usually more complex.

Retronasal

Aromas detected through the back of the throat after swallowing. Often reveals notes that weren’t apparent on the nose.

Mouthfeel

Texture, weight, and viscosity. Light and watery vs rich and oily. Tells you as much as flavour about quality and cask type.

Typicity

How well a whisky expresses the character of its region or distillery. A Laphroaig should taste like Laphroaig. Deviation is interesting – but only if intentional.

One practical exercise: before your next dram, spend thirty seconds nosing the empty glass after you have poured. What do you detect? Then nose the full glass. Then add a few drops of water and nose again. Three separate noses, three separate notes. By the time you taste, you already have a picture of the whisky that most people never form at all.
